 About our Beef

Our Black Angus beef herd is all-natural and raised using feed (grass & grain) grown right here on our farm.  Our calves are born in the spring and are raised with their mothers outside on pasture until they are about 9 months old.  The cows and calves have free choice minerals throughout their lives. After 9 months of age we separate the calves from their mothers in order to feed them a hay and grain corn diet.  When the steers are 16 months of age they should be around 1200 pounds live weight, at which point the animal would be finished and ready for butchering.  We try to finish a beef animal with enough corn to produce good marbling in the meat but have minimal trim (little to no extra fat that would be wasted).   Our beef should be tender with a good flavor.

 
How our beef is sold

Our beef is usually sold by the whole, half, or split half.  We use Tri-Town Packing as our meat cutting shop as they are USDA inspected and certified.  For 2010, we are selling our beef for $2.00 per pound hanging weight plus butchering ($.68 per pound).  What is the hanging weight?  It is the weight of the animal after the head, hide, legs and internal organs are removed, it is not the weight of the actual meat that is taken home.  About 60-70% of the hanging weight will return actual beef that will be taken home.  The other 30-40% is fat, bone, and moisture shrink.  

As an example a 1200 pound animal would yield about a 720 pound hanging weight carcass.  Out of that 720 pound carcass about 432 pounds of meat would be taken home.  So how does that $2.00 per pound hanging weight translate into actual take home beef?  With the butchering included the take home meat will cost about $4.47 per pound.   A typical beef retail cut breakdown can be found below or by visiting this website http://www.kansasbeef.org.     


How to order beef 
          
We try to have finished beef available year round but it is cut to order.  There is a 6 month waiting list at the meat cutting shop so we try to keep reservations for a few animals every month.  If you are interested in beef please let us know the quantity (Half, Whole, Quarter) and your time preference for delivery and we will do the best we can to accommodate you.
